Buying bones of saint is a Spanish tradition that is done between the months of October and November, more specifically for All Saints’ Day.

In our company we elaborate and fill Santo’s bones one by one. Made with artisan marzipan, they have a cylindrical shape and are filled with candied egg yolk. For the last few years we have been packing them individually so that they last longer.

Both the marzipan and the candied yolk we use are made in our workshop in Jijona in an artisan way and each bone is characterized by its flavor and how tender they are.

They are presented in trays of 250g, about 8 units. It is traditional to consume and buy “huesitos de santo” on dates close to All Saints’ Day and All Souls’ Day.

Among all the products derived from the marzipan that we sell, the bones of saint that you can buy in our store are possibly one of our star products since we have been manufacturing them since ever. Its name comes from its shape, elongated and cylindrical, reminiscent of a bone, very typical of the Day of the Dead.

Some people prefer to make “huesitos de santo” with theThermomix, but as we always say, marzipan made with the Thermomix is usually dry and preparing the yolk is very difficult. Always pay attention to the quality of the bones, our quality is supreme, the highest.

History: Where does it come from to buy the saint’s bones?

Although there are different theories, the history of the bones of All Saints dates back to the 17th century near Valencia. Its preparation is published in a book written by Francisco Martínez Montiño called Arte de cocina. In Jijona we have always made them.

Another theory goes back to the time when Christianity and paganism coexisted, a monk created a bone-shaped candy with a marzipan base, taking advantage of the fact that the festivity coincides with the almond season. But above all, it did so to detract from the pagan celebration of the Celtic New Year, which coincided with All Saints’ Day.

Be that as it may, nowadays it has become a tradition to consume them and we think that traditions should be maintained.

Our recipe, buy bones of Santo

The recipe for Huesos de Santo is simple, but requires a lot of experience and time, as working with marzipan is very delicate.

The one we make was written in a 1950’s recipe book of our family. Although we have adapted it to the present day, the proportions remain the same. The trick to avoid dry marzipan is to use a special variety of almond that is fresh, freshly picked and freshly peeled. The same almonds we use in the elaboration of our marzipan figurines.

Ingredients of the bones of saint

Artisan marzipan (Sugar, almond (45%), preservative (sorbic acid)), sweetened egg yolk filling ( Egg yolk (45%), sugar, glucose syrup, preservative: sorbic acid, stabilizer: E-466, acidifier: citric acid).

Allergens: Contains egg yolk and Nuts: Almonds. May contain traces of Lactose.
