All the tablets of soft Jijona nougat that you can buy in our store are the traditional ones and are perfect to share with the family. This is certified with the guarantee of the Jijona and Alicante nougat regulatory council (IGP) as it is made with the same process as our ancestors and with raw materials of the best quality and Mediterranean origin: Marcona almonds, pure honey, sugar and egg white. This is possibly the best classic turrón de jijona you can buy.
This format of Jijona nougat that you are going to buy is the classic 300 grams but you can also buy it in a thinner format of 200 grams. On the other hand, you can buy personalized nougat or our artisan nougat cake.
Made in the traditional way with our original artisan soft nougat recipe from 1854, all the soft Jijona nougat bars that you can buy here are the traditional ones and are perfect for sharing.
When buying good quality Jijona soft nougat you should know that several processes are needed to make it.
- First, the caramel is prepared by mixing the honey and sugar. Egg white is then added to the mixture as a whitener and as an emulsifier. Once the gargirol point is reached, the point where the caramel breaks easily, the toasted and peeled almonds are added.
- It is then cooled and crushed in large stone mills. The resulting paste is cooked again in the famous ”Boixets” and put into large molds where it is allowed to lose a little of the natural oil of the almond.
- The resulting blocks are divided into the traditional bars or tablets of Jijona soft nougat that we sell in our store.
Purchasing Jijona nougat with designation of origin means that its quality and traditional flavor is guaranteed. To obtain this certificate, the nougat must be 100% artisan and have a minimum of 10% honey in its composition, and at least 60% almonds in Jijona nougat.
In our case, our classic 1854 recipe far exceeds these percentages, since we use 70% of selected marcona almonds and 17% of pure honey. Products that must come from the Valencian Community and must be of high quality. Here is a video where you can see how we make this Xixona Nougat.
