When you buy good quality soft Soft Almond nougat (Jijona), you should know that several processes are required to make it.

1. First, the caramel is prepared by mixing honey and sugar. Subsequently, egg white is added to the mixture as a whitening and emulsifying agent. Once the ‘gargirol’ point is reached, the point where the caramel breaks easily, the toasted and peeled almonds are added.
2. It is then left to cool and ground in large stone mills. The resulting paste is cooked again in the famous ‘Boixets’ and placed into large molds where it is allowed to lose some of the almond’s natural oil.
3. The resulting blocks are divided into the traditional Bars of soft Soft Almond nougat (Jijona) that we sell in our store.

Acquiring Soft Almond nougat (Jijona) with a designation of origin means its quality and traditional flavor are guaranteed. To obtain this certificate, the Nougat must be 100% artisan and contain a minimum of 10% honey in its composition, and at least 60% almonds in the Soft Almond nougat (Jijona).

In our case, our classic 1854 recipe far exceeds these percentages, as we use 70% selected Marcona almonds and 17% pure honey. These products must come from the Valencian Community and be of high quality. Below, we provide a video where you can see how we make this Soft Almond nougat (Jijona).
