Buying egg yolk cakes is buying tradition. This marzipan filled with candied egg yolk and coated with fine sugar is made only with the finest Mediterranean almonds.
These cakes are baked in the oven just as our grandmother taught us. The recipe requires very careful control of timing and humidity inside the oven; otherwise, the marzipan would turn out dry. Finally, before being hand-wrapped in the traditional cake paper, they are dusted with a fine layer of sugar.
Few still make them by hand. We continue shaping them by hand. In the photos below you can see how we made them by hand, together with the gloria cakes, in the mid-20th century.
