Among all the marzipan products we sell, the Huesos de Santo you can purchase in our store are possibly one of our star products, as we have always made them. Their name comes from their elongated, cylindrical shape, which resembles a bone, very appropriate for All Souls’ Day.
Some people prefer to make Huesitos de Santo with a Thermomix, but as we always say, marzipan made with a Thermomix often turns out dry, and preparing the egg yolk is very difficult. One must always pay attention to the quality of the Huesitos; our quality is supreme, the highest.
History: Where does the tradition of buying Huesos de Santo come from?
Although there are different theories, the history of the bones of All Saints dates back to the 17th century near Valencia. Its preparation is published in a book written by Francisco Martínez Montiño called Arte de cocina. In Jijona, we have been making them forever.
Another theory points to the era when Christianity coexisted with paganism, where a monk created a bone-shaped sweet with a marzipan base, taking advantage of the fact that the festivity coincides with almond season. But above all, he did it to detract from the pagan celebration of the Celtic New Year, which coincided with All Saints’ Day.
Whatever the case, today it has become a tradition to consume them, and we believe that traditions must be maintained.
Our Recipe: Purchasing Huesitos de Santo
The Huesos de Santo recipe is simple but requires a lot of experience and time; working with marzipan is truly very delicate.
The recipe we use was written in a 1950s family cookbook. Although we have adapted it to modern times, the proportions remain the same. The trick to prevent the marzipan from drying out is to use a special variety of fresh, freshly picked, and freshly peeled almond. The same almond we use in the preparation of our marzipan figurines.

Artisan marzipan (Sugar, almond (45%), preservative (sorbic acid)), filling of sweetened egg yolk ( Egg yolk (45%), sugar, glucose syrup, preservative: sorbic acid, stabilizer: E-466, acidifier: citric acid).
Allergens: Contains egg yolk and tree nuts: almonds. May contain traces of Lactose.
