The main reason for the controlled and non-stock production is that our artisan Christmas pastries are made with 100% natural ingredients and the best-before dates are usually short (some are only 3 months). Some of its ingredients, such as eggs or lard, tend to go rancid quickly, and this, combined with the summer heat (for example), means that the quality of our products is not what we want it to be.

The low demand for artisan Christmas pastries during the year, together with the natural ingredients, means that our production is mainly focused between October and December.
