These yolk cakes are handmade with delicious candied yolk covered with artisan marzipan. It is a sweet that leaves no one indifferent, it melts in your mouth!

These egg yolk cakes can be purchased individually packed on a tray and in a cardboard box with two formats to choose from, 265g or 500g.

Buying yolk cakes is buying tradition. This marzipan filled with candied egg yolk and covered with fine sugar is made only with the best Mediterranean almonds.

These cakes are made in the oven just as our grandmother taught us. The recipe requires a lot of control with the time and humidity inside the oven, otherwise the marzipan would be dry. Finally, before being wrapped by hand with the traditional pastry paper, it is sprinkled with a thin layer of sugar.

Few still make them by hand. We continue to shape them by hand. In the photos below you can see how we used to make them by hand, together with the glory cakes, mid 20th century.
