Manufactured under the same high quality standards as our classic nougat, our soft nougat cream is elaborated in the same way as the traditional Jijona nougat but with the peculiarity of going through a “thermomix”.
The ingredients of this cream nougat are: Ingredients: Toasted almond (69%), honey (17%), sugar, emulsifier (E-417) and egg albumin. May contain traces of other nuts and/or sesame.
The emulsifier (E-417) we use in this nougat cream is called “Tara Gum” and is a totally natural thickener from seeds. It is used in small quantities (less than 2%) to avoid the natural dissociation of the almond oil when it passes through the blender without modifying its taste or texture.
Some companies use milk or cream to make their nougat creams . We prefer to keep the original Jijona recipe and not add dairy products.
