Buying Marquesas de Almendra is very traditional at Christmas time. Ours are practically impossible not to eat one between meals because of how good they are.
This recipe for marquesas was our grandmother’s, who made them delicious every year. The preparation is quite difficult because you have to control the baking times very well so that they do not become dry. But what makes them special is the ingredients we use, starting with the best quality almonds. Our recipe for Marquesas de la viuda was written by our grandmother when she became a widow and is unique because, although the ingredients are the same as the traditional ones, the cooking times vary depending on the type of almond, the external temperature and the humidity of the environment.
The ingredients of these almond marquesas are: Ground almonds, sugar, egg and natural lemon zest. We make them in a special oven that allows us to control the time and temperature very well. We used to do it by hand, but now we use ovens with special timers.
