The steps to make these empanadillas de gloria filled with sweet potato are simple: A block of artisan marzipan, made with at least 50% almonds, is rolled into a thin layer, and circles are cut out with a glass to create the ideal shape. Once cut, each piece is filled with sweet potato and folded by hand into the empanadilla shape. After a brief baking, they are individually wrapped to ensure they stay fresh longer.
