The chocolate dragées or chocolate almonds that we make and sell at Turrones la Colmena follow a strict artisan production process. They are handmade in cold chambers to maintain the quality of the chocolate and never break the cold chain.
First, the Marcona almonds are selected to ensure that none arrive broken, as whole almonds are required. Once selected, they are placed in rotating metal drums that turn continuously at a constant speed.
In 5-10 minute batches, a ladle of melted chocolate is poured and left to cool for a few minutes. This process is repeated several times until achieving a uniform layer of chocolate distributed across the entire almond.
Finally, the master confectioner gives them the final touch, their characteristic shine. We also have traditional white sugar-coated almonds.
These artisan chocolate almonds are packaged mixed in a 175g jar. We also have bulk chocolate almonds in 3kg boxes.
