Made with egg and soft artisanal Jijona nougat, it has a creamy texture and a flavour very similar to traditional flan, but with notes of toasted almond and honey. Delicious.
Ingredients to make homemade nougat flan
For our nougat flan recipe, you will need:
- 500 g of liquid nougat. (You can also use the original, classic Jijona nougat chopped with a knife, or nougat cream.)
- 500 ml of whole milk.
- 5 large eggs
- 5 tablespoons of sugar for the flan mixture.
- 5 tablespoons of sugar to make the caramel (optional)
The caramel is optional in our artisanal nougat recipe. To decorate this Jijona nougat flan recipe, we recommend cutting half a Jijona nougat bar into small cubes.
How to make Jijona nougat flan
This recipe for making nougat flans at home is very easy to prepare.
- Preheat the oven to 175°C.
- In a bowl, mix the nougat paste well with the whole milk and whisk until everything is fully combined.
- In another bowl, mix the eggs with the sugar until you get a pale mixture. Once ready, combine it with the milk and nougat mixture and set aside.
- (Optional for the nougat flan) Make the caramel in a non-stick frying pan or saucepan by heating the 5 tablespoons of sugar in a small saucepan. We recommend that, when it starts to darken, you lower the heat and stir until it turns golden. Be careful, as it gets very hot. Finally, pour the caramel into the moulds. You can also buy ready-made caramel.
- Fill your moulds with the nougat flan mixture you set aside.
Cooking: We are going to cook the nougat flans the traditional way, in a bain-marie. We recommend not opening the oven constantly and waiting for the set times.
- Place your moulds filled with soft nougat flan in a tray or large dish with about 3 fingers of water and bake for 30–35 minutes. A trick to know if they are ready is to insert the tip of a knife or a toothpick; it should come out clean.
- Once baked, let the flans cool to room temperature and then refrigerate until ready to serve.
If, instead of individual moulds, you use a large dish or flan mould, we recommend leaving it in the oven for longer. Depending on its shape, it will take approximately between 1 hour 30 minutes and 2 hours.
