Recipe: How to make Turrón Ice Cream
Summer is here and there is nothing better than having something cool and healthy. Today we bring you our very simple recipe for homemade turrón ice cream.
It is true that this turrón ice cream recipe is not 100% the same as those used in ice cream parlors, as we would need very specific machinery, but the result is spectacular.

In the final result of this recipe, the turrón we use matters a lot, especially regarding the sugar percentage. You should buy high-quality turrón containing little sugar and a large amount of honey and almonds, as these flavors tend to be masked at low temperatures. A large amount of sugar will result in a homemade turrón ice cream that lacks flavor.
Ingredients for making Turrón Ice Cream
In our Jijona turrón ice cream recipe, we will use the following ingredients:
- 450g of Jijona turrón paste
- 500ml heavy whipping cream
- 3 egg yolks
- 400ml whole milk
- Zest of one lemon
- Cinnamon stick
- 3 tablespoons white sugar
- Half a teaspoon of salt
Liquid turrón can be replaced with classic Jijona turrón, although you will need about 500g since creamy Jijona turrón has a more prominent flavor (it is specially prepared for cooking).
How to prepare homemade turrón ice cream at home
To make homemade turrón ice cream, follow these steps:
- Prepare the milk in a large saucepan.
- Heat all the milk together with the cinnamon stick and the lemon zest (only the yellow part, without the bitter white pith).
- When the milk reaches a boil, lower the heat to minimum for about 20 seconds.
- Prepare the turrón ice cream.
- Pour all the cream into the large saucepan with the milk and heat over very low heat.
- At the same time, separate the yolks from the whites and whisk them with the sugar until they turn white.
- Add the liquid-textured turrón and the salt to the egg and sugar mixture and mix well.
- Once a homogeneous mixture is achieved, add the turrón mixture to the milk and cream. This must be done gradually while stirring constantly.
- Allow to cool to room temperature in a mold. At this stage, you can add chopped turrón pieces, depending on whether you like finding bits of turrón inside, or you can add the almond crocanti from this recipe.
- After a few hours, place our Jijona turrón ice cream cream in the refrigerator for a few hours and finally in the freezer, and it will be ready to be consumed.
