Ingredients for making Easter mona cakes

With our Easter mona cake recipe, you will get approximately 3 to 4 sponge mona cakes, depending on the size you make them.

  • 6 eggs.
  • 6 tablespoons of sugar.
  • 6 tablespoons of flour.
  • 1 double sachet of El Tigre raising agent.
  • 3 eggs, previously boiled.

To decorate and make this Easter mona cake recipe special, we will use our Jijona nougat and a round of pure chocolate nougat with almonds. Other nougats can also be used, such as milk chocolate nougat or Alicante nougat.

How to make Easter mona cakes

To make homemade Easter mona cakes, this recipe is the easiest.

  1. Our Easter mona cake recipe with nougat begins by separating the yolks from the whites and whipping the whites to stiff peaks at high speed (until they are like a firm meringue). You can do this with a whisk or another utensil such as a mixer.
  2. Add the 6 tablespoons of sugar and continue beating until the whites form peaks when you lift the whisk.
  3. Next, at a very low speed—or even using a spatula—add the 6 yolks you set aside, the 6 tablespoons of flour, and the double sachet of El Tigre raising agent, and mix slowly so the meringue does not deflate. (If you sift the raising agent and the flour, you will achieve a better result.)
  4. Pour the mixture into the moulds you have for making Easter mona cakes and place the boiled egg in the centre.
  5. Decorate to taste on top with pieces of Jijona nougat, chocolate, or aniseed sprinkles you have at home.
  6. With the oven preheated, for this Easter mona cake recipe bake them for about 20–25 minutes at 170°C. We recommend not opening the oven until the Easter mona cakes are done, as opening the oven too much will cause the sponge to sink and it will not look as nice.
