Buying Almond Marquesas is a Christmas tradition. Ours are so delicious it is practically impossible not to snack on them between meals.
This marquesas recipe belonged to our grandmother, who made them wonderfully every year. The preparation is quite difficult because baking times must be carefully controlled so they do not dry out. But what makes them special are the ingredients we use, starting with the highest quality almonds. Our Marquesas de la Viuda recipe was written by our grandmother when she became a widow; it is unique because, although the ingredients are the same as the traditional ones, the cooking times vary depending on the type of almond and the ambient humidity.
The ingredients of these almond marquesas are: ground almonds, sugar, egg, and natural lemon zest. We prepare them in a special oven that allows for precise control of time and temperature. We used to make them by hand, but now we use ovens with special timers.
