Almond Cinnamon soft nougat, also called the nougat of the people of Jijona, is a sweet that has not been widely marketed and has been gaining recognition over the last decade as the best vegan nougat, since it does not require cooking honey or egg, only grinding the almond against a stone, hence its name.

One of the specialities of the people of Jijona, made with roasted almonds, sugar, lemon zest and a little cinnamon. A bit dry? Not at all! The almond used is Marcona, an almond with a high oil content that makes for a flavourful and moist Almond Cinnamon soft nougat. We eat it with a spoon!

This Almond Cinnamon soft nougat has been part of Jijona’s pantry for a long time. And this is precisely the nougat that was made in homes, having a more manual preparation, without machinery.

To make artisan Almond Cinnamon soft nougat we only need: Roasted almonds of the finest quality, fresh lemon zest and sugar. These ingredients are ground in a stone mill (similar to a flour mill) until a sweet paste is created, which is weighed and placed into moulds. Finally, it is sprinkled with a touch of cinnamon.
