Buying crema catalana or toasted Yolk nougats is very typical in Catalonia.
Its origin, according to legend, is that in Jijona the person in charge of purchasing raw materials made a mistake when buying the eggs needed to manufacture the typical Jijona and Alicante nougats (where egg whites are used), buying many more than necessary by confusing dozens with units; to avoid wasting them, he invented a kind of egg marzipan that evolved into untoasted Egg Yolk nougats.
Whether the legend is true or not, it has become a favorite for many due to its genuine candied egg flavor. This nougat is gluten-free and lactose-free; however, it is not suitable for vegans as it contains candied egg yolks.
