Buying toasted egg yolk nougat is a Christmas tradition.
According to legend, its origin lies in Jijona when a merchant made a mistake while buying the eggs needed to manufacture the typical Jijona and Alicante nougats (where the white is used), purchasing more than double the amount required. To avoid throwing them away, he invented a kind of egg marzipan that evolved into a nougat made of egg yolk without being toasted or burnt.
Whether the legend is true or not, today it is one of our best-selling nougats alongside the traditional ones. This is a gluten-free and lactose-free nougat. However, it is not suitable for vegans as it contains candied toasted egg yolk.
