Buying burnt yolk nougat is very typical at Christmas. Its origin, according to a legend, is that in Jijona the person in charge of buying the raw material made a mistake when buying the eggs needed to make the typical Jijona and Alicante nougat (where the egg white is used) and bought many more than necessary by confusing dozens with units and, in order not to get rid of any, he invented a kind of marzipan with egg that resulted in a nougat of egg yolk not toasted or burnt.
Whether the legend is true or not, it has become a favorite of many people for its genuine candied egg flavor. This nougat is gluten and lactose free , however, it is not suitable for vegans as it contains candied egg yolks.
