Buying burnt yolk nougat is very typical at Christmas time. Its origin, according to a legend, is that in Jijona the person in charge of buying the raw material made a mistake when buying the eggs needed to make the typical Jijona and Alicante nougat (where the egg white is used) and bought many more than necessary. by confusing dozens with units and, in order not to get rid of any of them, he invented a kind of marzipan with egg, which resulted in an Egg yolk nougat, not toasted or burnt.
Whether the legend is true or not, it has become a favorite of many people for its genuine candied egg flavor. This nougat is gluten and lactose free , however, it is not suitable for vegans as it contains candied egg yolks.
In Turrones la Colmena we burn the sugar in an artisan way to each yolk tablet. Now you can see how we do it. Spectacular aroma…!
