Buying nougat of crema catalana or Yema tostada is very typical in Catalonia.
Its origin, according to legend, is that in Jijona the person in charge of buying the raw material made a mistake when buying the eggs needed to make the typical Jijona and Alicante turrones (where the egg whites are used) and bought many more than necessary , confusing dozens with units and, so as not to get rid of any, he invented a kind of marzipan with egg that resulted in a turrones of unroasted egg yolks .
Whether the legend is true or not, it has become a favorite of many people for its genuine candied egg flavor. This nougat is gluten and lactose free , however, it is not suitable for vegans as it contains candied egg yolks.
